National Applejack Month occurs each year in October and celebrates the first original distilled liquor in the United States, also known as "Jersey Lightning."
Applejack is an early colonial drink made from hard cider, wine, or beer. To make it, simply freeze the beverage, peel off the ice (the water component), and what remains is highly concentrated alcohol. The process is called "freeze distillation."
Applejack grew in popularity when the reverend John Chapman (Johnny Appleseed) worked his way up and down the Ohio River, distributing apple tree seeds to the people and instructing them on how to create applejack from the fruits of their labor.
Applejack is used in various cocktails and continues to be distilled today by Lairds of Scobeyville, New Jersey, a licensed distillery since 1780.
