National Chocolate Éclair Day celebrates the pastry filled with cream and covered with chocolate. This dessert originated in France. The name éclair comes from a French word that translates to “flash of lightning.”
Believed to be a creation of the French chef Antonin Careme, the first English recipe for éclairs was published in the 1884 Boston Cooking School Cook Book.
