Fajitas are a favorite with people who love Tex-Mex cuisine. The barbequed meat and vegetable dish was invented in the 1930s by Mexican ranch workers in West Texas. It is the epitome of Tex-Mex, food that mixes Mexican and American culture/flavors. Chain restaurant On the Border created National Fajita Day to celebrate this Hispanic and American favorite.
