German Black Forest Cake or Schwarzwälder Kirschtorte is a layered sponge cake soaked in cherry schnapps, stuffed with whipped cream and whole cherries, and topped with frosting and dark chocolate shavings. It is named black forest for one of its main ingredients, the Morello cherry, which grows in this southwest region.
Pastry chef Josef Keller (1887-1981) invented the Black Forest cherry cake in 1915 for his Café Ahrend.
