DESCRIPTION:

Escargot is French for “snail”. Snails have been part of diets for millenniums.

In 54BC the army of Julius Caesar dined on snails throughout its conquest of what today we know as France, Luxembourg, Belgium, most of Switzerland, Northern Italy and parts of the Netherlands and Germany.

Snails became popular as a dessert in the Renaissance period. They were considered fish and therefore didn’t violate the Christian mandate to eat fish on Fridays or Lent restrictions.

By the 1890s, Escargots à la Bourgignonne (snails with butter-parsley-garlic sauce) had gone from dessert to appetizer and were considered a posh addition to any meal.

Today we celebrate this dish in a much loved foodie holiday.
