Chocolate Parfait Day falls on the first of May each year. A Parfait can be made with either pudding or custard. Custards have eggs. Puddings do not. Custards are thickened by egg protein. Puddings are thickened by starch (tapioca, corn starch, etc.) This is an unofficial holiday with no sponsor.

Clap 4 Health Month: May

If you're confused because this event usually occurs during winter, you're sane. The organizers keep moving it around. First it was January, then March, now May. Hopefully they'll keep it in one place now. Children, Seniors and just about everyone can clap. Not only is it exercise, but it releases feel-good endorphins that elevate your mood. Clap 4 Health Month is an annual outreach program which uses clapping to educated Americans about obesity and cardiovascular disease.

Computer, Choose Privacy Week: May 1-7

The American Library Association is on the frontlines of privacy protection, protecting patrons right to search for information free from surveillance. The freedom to read and receive ideas anonymously is at the heart of individual liberty in a democracy. Librarians defend that freedom every day. National Choose Privacy Week is an annual education initiative of the American Library Association designed to teach people how to safeguard their privacy online. As the Library Bill of Rights states: "Privacy is essential to the exercise of free speech, free thought, and free association. Lack of privacy and confidentiality chills users’ choices, thereby suppressing access to ideas. The possibility of surveillance, whether direct or through access to records of speech, research and exploration, undermines a democratic society."

Crohn's & Colitis Awareness Month (AU): May

May is Crohn's & Colitis Awareness Month in Australia. The same event is observed in Canada each November. Crohn’s disease can involve any part of the gastrointestinal tract from the mouth to the anus but most commonly affects the small intestine and/or the colon. There may be areas of healthy intestine between areas of diseased intestine. Within a diseased section, Crohn’s disease can affect all layers of the intestinal wall. This can lead to the development of complications that are specific to this condition: Strictures (intestinal obstruction or narrowing of the intestinal wall) Abscesses (boils) and skin tags (swollen lumps or ‘flaps’ of thickened skin occurring just outside the anus) Fistulae (abnormal channels connecting different loops of intestine to itself or to other body organs) Fissures (ulcerated tears or cracks in the lining of the anal canal) malabsorption and malnutrition Sometimes surgery is required to abate Crohn's Disease, but often simple changes to diet can alleviate the problem. This month is about raising awareness of the disease and what people can do to mitigate the affects and improve the quality of their lives.

Cystic Fibrosis Month: May

Each May the Cystic Fibrosis Foundation Sponsors Cystic Fibrosis Awareness Month to highlight the growing need for awareness about cystic fibrosis (CF). During this time volunteers and people with CF and their families unite to help shine a spotlight on what CF is and the progress being made toward a cure. 1) 30,000 children and adults have CF in the United States. 2) More than 10 million Americans are symptomless carriers of the defective CF gene. 3) About 1,000 new cases of cystic fibrosis are diagnosed each year. Activities include: Walk in Great Strides, an annual fundraising walk occurring in over 600 locations throughout the United States. Australia also observes May as 65 Roses Month with 65 Roses Day at the end of May to bring awareness to this disease as well. Cystic fibrosis is an inherited chronic disease that affects the lungs and digestive system of about 30,000 children and adults in the United States (70,000 worldwide). A defective gene and its protein product cause the body to produce unusually thick, sticky mucus that: Clogs the lungs and leads to life-threatening lung infections; and Obstructs the pancreas and stops natural enzymes from helping the body break down and absorb food. In the 1950s, few children with cystic fibrosis lived to attend elementary school. Today, advances in research and medical treatments have further enhanced and extended life for children and adults with CF. Many people with the disease can now expect to live into their 30s, 40s and beyond. The symbol of Cystic Fibrosis is the 65 Roses Campaign.

Digestive Diseases Awareness Month, Ntl.: May

In 1988 President Reagan proclaimed Digestive Diseases Awareness Month. Digestive diseases rank second among all of the causes of disability due to illness in the United States, and account for one-tenth of the economic burden of illness. Their social and economic impact is enormous; half of all Americans are affected by them at some time during life. More Americans are hospitalized for digestive diseases than for any other family of illness. In recent years major advances have taken place in digestive disease research, but efforts to determine their causes and to develop ways to prevent and treat them have only begun. Knowing the impact of these diseases and of the critical need for research in this field, private, scientific, and governmental organizations have committed themselves to increasing public awareness and understanding of gastrointestinal diseases. Emergency Preparedness Week, Ntl. (CA): May 1-7

Preparing for an emergency is something that everyone has a responsibility to do. This year, Canadians are encouraged to learn about the specific risks and hazards in their regions, and the actions they can take before an emergency to help reduce the impact of a disaster. To strengthen Canada’s emergency management approach, our Government is shifting from a reactive model to one that allows us to better predict, plan for, and prevent natural disasters and the costs suffered by Canadians. To this end, we are investing $200 million over five years in the National Disaster Mitigation Program to support provincial and territorial flood mitigation efforts. Through the Get Prepared campaign, our Government has worked with provincial and territorial partners to encourage Canadians to know the risks, make a plan and get an emergency preparedness kit. With basic emergency preparedness in place, the next step is to take action to reduce the risks most likely to affect your family and community. Everyone can take simple steps to reduce disaster risk. For example, if you live in a flood-prone area, you can help prevent flood damage by using a weather-protection sealant around basement windows and ground-level doors. Make sure drainage around your home helps move water away from the building. Emergency management is a joint responsibility. This week, we also take the opportunity to recognize and thank first responders, volunteers, community leaders, non-governmental organizations and authorities at all levels of government for their support in emergency management.
