National Noodle Month celebrates the wheat-based (or rice at times) long squiggly food we call noodles. Noodles differ from pasta in that they're made from milled wheat flour; pasta is made from durum semolina, which is coarser.

Pasta dough is passed through a mold or die, which is why it can come in various shapes, sizes, and textures. Noodles, however, are always long and either tubular or flat.
Pasta is usually purchased dry (or fresh in gourmet shops) and boiled or baked. Perfectly cooked pasta is soft on the outside but firm on the inside. The Italian term for this is "Al Dente." Pasta tends to hold onto sauces much better than noodles.
