Melba toast is named after Dame Nellie Melba, the stage name of the Australian opera singer Helen Porter Mitchell (May 19, 1861-February 23, 1931).
Melba toast was created for her by her chef and fan Auguste Escoffier as a part of her diet when she was very ill.
Interestingly, he also named the Peach Melba after her.
