Chop Suey (Assorted Pieces) may well be the first Asian-American dish. It is rumored to have been created in 1896 in an effort to satisfy the tastes of both Chinese and American diplomats. There is no way to prove that, but Chop Suey is a great way to use leftovers and extend their life.
