Bartending originated in Rome, Greece, and Asia. It is a profession that, in its infancy, required the barkeeper to be skilled at brewing spirits, ales, and wines. Beginning in the 20th century, cocktails became popular, and the bartender, rather than a keeper, was born. Prohibition increased the popularity of these mixed drinks. By the time the United States emerged from the stranglehold of the Volstead Act, bartending had been elevated to a highly skilled service profession.
