National Pawnbrokers Day is celebrated on December 6 every year in honor of Saint Nicholas. Legend has it that Saint Nicholas died on December 6, 343 AD. Also known as Nikolaos of Myra, he was a Greek Bishop of Myra in Asia Minor (modern-day Turkey). Because of the miracles he performed, he was also known as Nikolaos the Wonderworker. Saint Nikolaos became the patron saint of sailors, merchants, archers, repentant thieves, children, brewers, students, and pawnbrokers. Hence, National Pawnbrokers Day.

Pepper Pot Day (1777): December 29

The origins of Pepper Pot Day and the pepper pot itself go to the Revolutionary War. As the American army was camped at Valley Forge for ten days, on this especially harsh winter night, George Washington asked the army's chef to cook a meal that would boost the soldiers' morale and warm them up. The soup the chef came up with on December 29, 1777, was the pepper pot soup, also known as Philadelphia Pepper Pot Soup. The soldiers were so well received that it was called "the soup that won the war."

The annual observance was proclaimed in 1992 by the United Nations General Assembly resolution 47/3.

Whereas phenylketonuria (in this preamble referred to as "PKU'' is a rare, inherited metabolic disorder characterized by the inability of the body to process the essential amino acid phenylalanine and that causes intellectual disability and other neurological problems, such as memory loss and mood disorders, when treatment is not started within the first few weeks of life; Whereas PKU is also referred to as Phenylalanine Hydroxylase Deficiency; Whereas newborn screening for PKU was first initiated in the United States in 1963, became mandatory in most States in 1966, and was recommended for inclusion in State newborn screening programs under the Newborn Screening Saves Lives Act of 2007 (Public Law 110-204; 122 Stat. 705); Whereas approximately 1 out of every 15,000 infants in the United States is born with PKU; Whereas PKU is treated with medical foods that limit phenylalanine; Whereas the 2012 Phenylketonuria Scientific Review Conference affirmed the recommendation of lifelong dietary treatment for PKU made by the National Institutes of Health Consensus Development Conference Statement in 2000; Whereas, in 2014, the American College of Medical Genetics and Genomics and Genetic Metabolic Dieticians International published medical and dietary guidelines on the optimal treatment of PKU; Whereas medical foods are necessary for children and adults living with PKU; Whereas adults with PKU who discontinue treatment are at risk for serious medical issues, such as depression, impulse control disorder, phobias, tremors, and pareses; Whereas women with PKU must maintain strict metabolic control before and during pregnancy to prevent fetal damage; Whereas children born from untreated mothers with PKU may have a condition known as "maternal phenylketonuria syndrome," which can cause small brains, intellectual disabilities, congenital disabilities of the heart, and low birth weights; Whereas although there is no cure for PKU, treatment involving medical foods, medications, and restriction of phenylalanine intake can prevent progressive, irreversible brain damage; Whereas access to medical foods varies across the United States, and the long-term costs associated with caring for untreated children and adults with PKU have a substantial financial impact on families, individuals, and society; Whereas access to medical foods can prevent detrimental effects on individuals with PKU, their families, and society; Whereas scientists and researchers are hopeful that breakthroughs in PKU research will be forthcoming; Whereas researchers across the United States are conducting important projects involving PKU; and Whereas the Senate is an institution that can raise awareness of PKU among the general public and the medical community: Now, therefore, be it be resolved, That the Senate— (1) designates December 3, 2021, as "National Phenylketonuria Awareness Day," (2) encourages all individuals in the United States to become more informed about phenylketonuria and the role of medical foods in treating phenylketonuria; and (3) respectfully requests that the Secretary of the Senate transmit an enrolled copy of this resolution to the National PKU Alliance, a nonprofit organization dedicated to improving the lives of individuals with phenylketonuria.

Poinsettia Day in the US celebrates the beautiful red, white or pink plant most people associate with Christmas. Poinsettia Day marks the anniversary of the death of Joel Roberts Poinsett on December 12, 1851. Poinsett was an American botanist, physician, and diplomat who discovered the gorgeous plant in 1828 in Southern Mexico. Botanically, the plant is known as Euphorbia Pulcherrima, but its common name since 1828 is Poinsettia. National Poinsettia Day became an official US observance in 2002 via US House of Representatives resolution HR471.

Created in 2010 by the foodie blog Foodimentary, National Popcorn on a String Day pays homage to the European custom of stringing popcorn, nuts, and berries together to form a garland. During the medieval times through the Victorian era, this custom served as a wild bird feeder during the winter months, attracting the colorful birds that braved the cold and hung around through yuletide. During the Great Depression, Americans took to the custom in force. With little money for Christmas decor and extravagance, the popcorn garland became a way to entertain the children and decorate the tree. Often referred to as the ‘poor man’s tinsel,’ though of European origin, the popcorn garland is firmly entrenched in today’s Americana and most often associated with US culture. What is the best way to celebrate? Pop some corn and get stringing!
