Peking Duck (roast duck), a dish originating in Beijing (formerly called Peking), China, could be considered a diplomatic dish. It was served to then Secretary of State Henry Kissinger on July 10, 1971, and he immediately fell in love with the dish, marking the beginning of US/China relations. The delicacy first appeared during the Yuan Dynasty under Kublai Khan (1279–1368 AD) and was popularized during the Ming Dynasty (1368 to 1644 AD) through the imperial court.

It occurs on the birthday of its creator in the English language, Peter Mark Roget (January 18, 1779 - September 12, 1869). Roget created the first modern-day thesaurus in 1805, but it wasn’t published until 1852. His book, with updates, is still in print today.

Winnie-the-Pooh Day (1882): January 18

Winnie-the-Pooh Day marks the anniversary of Alan Alexander Milne's birth on January 18, 1882. He first wrote of Christopher Robin (his son and one of the characters in Winnie-the-Pooh) in the poem 'Vespers' for Vanity Fair in 1923. Vespers led to his first illustrated children's book in 1924. This book featured a story about a Teddy Bear, but it wouldn't be until Christmas Eve 1925 that Winnie-the-Pooh would make his official debut in a bedtime story published in the Evening News. That bedtime story became chapter one of his 1926 book, Winnie-the-Pooh, and the rest is history. Happy Winnie-the-Pooh Day!

He is considered one of the most influential people of the 20th century. Dr. King was assassinated in Memphis, Tennessee, on April 4, 1968.

In some cases, like Georgia, it is no longer referred to as Confederate Memorial Day but rather as a state holiday. It is an official state holiday that honors the men who died fighting for The Confederacy during the American Civil War, 1861-1865. The dates are as follows: Alabama, Georgia: 4th Monday in April Mississippi: Last Monday in April Florida: April 26; Tennessee, Kentucky & Louisiana: June 3, Jefferson Davis's birthday in 1808 North & South Carolina: May 10, Anniversary of the death of General "Stonewall" Jackson in 1863 Texas: January 19, Birthday of Robert E. Lee 1807; Due to the 400-year legacy of slavery (ending in 1865) and state-supported racial segregation (ending in 1964), this event is highly contentious and seen as a celebration of racism by many critics. Detractors insist this plays into existing racism and celebrates white supremacy and slavery. Proponents insist that the Confederacy played a part in shaping who we are, and to deny a portion of our past, good and bad, is selective censorship. Both sides have points. Confederate Memorial Day can be used to explore the unspoken but oft-deployed prejudices, which are real. It also opens discussions of extreme political correctness, which squelches debate and is equally intolerant. Whether you side with the detractors or the proponents, the best way to acknowledge this day is to spend some time reading the Constitution of the United States and learning history. History, not social studies. History teaches the how and why; social studies do not. A great place to start is with Howard Zinn's "Peoples' History of the United States," which some states, including Arizona, have tried to ban from their schools. Why? Because it is the history of the American people, not the leaders, barons, and wealthy. It looks at the nation from the perspective of the 99%, the immigrants, migrant workers, women, religious minorities, Native Americans, slaves, and the common man. The Confederacy existed, and it impacted and continues to impact American history. Ignoring it doesn't make it go away, and squashing debate on it doesn't work. Learning about it and understanding the whys and hows is the best defense against a second tearing asunder. Popcorn Day, Ntl. (1853): January 19

National Popcorn Day marks the anniversary of the birth of Charles Cretors on January 19, 1853. Cretors owned a confectionary shop in Decatur, Illinois, and decided to expand his offerings onto the sidewalk where people were. He purchased a peanut roaster but found it needed more functionality. Tinkering, he improved it and added other products. He is the person that created the sidewalk roasters used for peanuts, coffee, and popcorn that were commonplace in the late 19th century through WWII. Because of Cretors, you could go to the boardwalk, ball game, or circus and enjoy roasted peanuts or popcorn, fresh and hot. National Popcorn Day honors his memory. Popcorn has been around for about 4,000 years, but it wasn’t until 1519 that Europeans discovered it. Cortes got his first sight of popcorn when he invaded Mexico and came into contact with the Aztecs. Popcorn was an essential food for the Aztec Indians, who also used popcorn as decoration for ceremonial headdresses, necklaces, and ornaments on statues of their gods, including Tlaloc, the god of rain and fertility. Today it is a favorite snack the world over. Americans consume some 16 billion quarts yearly, or 51 quarts per man, woman, and child. The Popcorn Board is the official representative of all things popcorn in the United States. World Quark Day was invented in 2019 to celebrate the cream cheese-like food out of Europe described as a cross between buttermilk and yogurt. Unlike many new plant-based foods, quark is derived from real buttermilk. It is much lower in fat than traditional cream cheese but spreads as easily and can be substituted. High in calcium, it is prized in the elderly care community.
