NATIONAL CONDIMENT MONTH: CELEBRATING FLAVOR ENHANCERS National Condiment Month, celebrated every May, highlights the beloved sauces, spreads, and seasonings that elevate our meals. Established by the Condiment Marketing Association, this month-long celebration acknowledges condiments' cultural and culinary significance in kitchens across the United States. The word "condiment" originates from the Latin word "condimentum," which means "spice, seasoning, or sauce." This, in turn, derives from the Latin verb "condire," meaning "to preserve, pickle, or season." The use of condiments dates back to ancient times when people sought ways to enhance the flavor of their food and preserve it through various methods, including pickling and seasoning. Over time, the term evolved to encompass multiple sauces, spreads, and seasonings used to flavor dishes. THE HISTORY OF CONDIMENTS Condiments have a rich history dating back thousands of years. Ancient civilizations, including the Egyptians, Greeks, and Romans, used various spices and sauces to enhance the flavor of their food. Archeologists discovered mustard seeds in the tombs of Egyptian pharaohs, and the Romans created garum, a fermented fish sauce that was a staple in their cuisine. Over centuries, condiments evolved, incorporating new ingredients and methods as global trade expanded. Top Five Condiments in the United States Ketchup—A staple in American households, ketchup, originally derived from a Chinese fish sauce, became popular in the 19th century when tomatoes were added. THE IMPORTANCE OF CONDIMENTS Condiments play a crucial role in culinary traditions by enhancing and complementing the flavors of dishes. They add depth and complexity to meals, allowing for personalized seasoning and the ability to cater to individual tastes. Condiments can also transform simple ingredients into gourmet experiences, making them indispensable in home and professional kitchens. HOW CONDIMENTS ARE USED Condiments are versatile and used in a multitude of ways: Flavor Enhancers—Condiments season and enhance the flavor of meats, vegetables, and grains. Dipping Sauces—Many condiments serve as dips for snacks like fries, chicken nuggets, and vegetables. Sandwich Spreads—Mustard, mayonnaise, and other spreads are essential for adding moisture and flavor to sandwiches. Marinades and Glazes—Barbecue sauce, soy sauce, and other condiments are often used to marinate meats or as glazes for grilling. Salad Dressings—Mayonnaise, vinegar, and oil-based condiments are vital ingredients in various salad dressings. National Realtor Day marks the anniversary of the founding of the Association of Realtors on May 12, 1908, in Chicago. The organization began with 120 members, 19 boards, and one state association. In 1913 a Code of Ethics was adopted with the Golden Rule as its theme. In 1916, the National Association of Real Estate Exchanges changed its name to The National Association of Real Estate Boards (NAREB) and adopted the term Realtor® for its members. This term and its derivatives were trademarked on Sept. 13, 1949, and Jan. 10, 1950. In 1972 the organization became the National Association of Realtors® (NAR). Today, membership has surpassed 1.2 million members with 54 state associations, including Guam, Puerto Rico, and the US Virgin Islands territories.

This event is believed created by the California non-profit In Defense of Animals. Per their 2017 press release, the organization outlines its objectives. As animal guardians, we urge all who share their homes with one or more animal companions: 1. To make a lifetime commitment to them, cherish and love them, and always treat them as family, with respect, compassion, consideration, kindness, and gentleness. 2. To care for their emotional needs and address behavior issues. 3. To promise only to adopt and never buy or sell a living creature. 4. To commit to sterilizing your animal companions. 5. Always provide them with nutritious food, fresh water, and daily exercise, and avoid using toxic cleaners and chemicals in your home. 6. always refer to yourself and others as guardians and family of your animal companions rather than owners or masters. 7. Treat all our fellow beings with whom we share our homes and planet with respect, consideration, kindness, justice, and compassion. 8. To protect our and their environments, to preserve their habitats, to work to end their enslavement, and to terminate any cruel and outdated customs and traditions in our country and around the world. In Defense of Animals invites you to pledge to drop the word "owner" and become, from this day, a "guardian" to all animals. Thank you for doing your part.

Ride of Silence, Intl.: May 20

In 2003, Chris Phelan organized the first Ride of Silence in Dallas after endurance cyclist Larry Schwartz was hit by the mirror of a passing bus and killed. The Ride of Silence is a free ride that asks its cyclists to ride no faster than 12 mph and remain silent during the ride. There are no sponsors and no registration fees. During National Bike Month, the ride aims to raise the awareness of motorists, police, and city officials that cyclists have a legal right to public roadways. The ride is also a chance to show respect for those killed or injured. As of 2010, this has become an international event, with riders worldwide joining in solidarity to honor those who have died in bicycle accidents. This event occurs on the third Wednesday in May unless rained out, and the alternate day is the Saturday following the third Sunday.
