Saint Francis was an Italian priest who lived in the 12th and 13th centuries. Zealous, he spent his life working on missions supported by the Holy Roman Church. St. Francis is best known for his love for animals and nature. He is often described as spending much of his time outdoors, listening to birds and talking with animals. That is why he is usually portrayed with a bird in his hand today. Many people take their pets to a church on St. Francis Day to receive a blessing. The Church often holds up St. Francis to urge people to take better care of the environment and follow his example.

KOREAN FOOD COMES TO PHILADELPHIA: THE KIMCHI FEST Created in 2022, the Kimchi Fest in Philadelphia, Pennsylvania, United States, celebrates the dish and Korean culture with food tables, a Korean cultural market, live performances of K-pop and traditional Korean music, dance, and Hanbok fashion and cultural workshops. Kimchi is a traditional Korean side dish made primarily from salted and fermented vegetables, napa cabbage, and Korean radishes, with various seasonings, including chili powder, scallions, garlic, and ginger. The dish dates back to the third to fourth centuries when it was salted vegetables without the spicy ingredients of today. The introduction of chili peppers from the Americas in the late 16th century transformed kimchi's flavor profile. This addition marked the birth of the red, spicy kimchi known and loved today. More than just food, kimchi holds profound cultural and symbolic meaning for Koreans. Making kimchi, known as "Kimjang," involves families gathering to prepare large quantities for the winter months. UNESCO recognized Kimjang as an Intangible Cultural Heritage of Humanity in 2013. Kimchi's fermentation process encourages the growth of beneficial bacteria, similar to yogurt. Plus, it features a high concentration of vitamins, minerals, and probiotics. With the global spread of Korean cuisine, kimchi has gained international recognition. Its unique blend of spice, tang, and crunch has earned it a place on tables worldwide, both as a side dish and a versatile ingredient in various recipes.

On October 4, 1957, Sputnik I was launched by the Soviet Union, kicking off the Space Race that would culminate in the July 1969 moon landing. The United Nations declared 1999 World Space Week to mark all achievements in space, and it has grown into the most significant public space event on Earth. Today, more than 3,700 events in 80 countries celebrate the benefits of space. It occurs annually during the week of October 4-10 to celebrate the launch of Sputnik.

Ten-Four is radio lingo for "I got it," "Good to go," or "Affirmative." It is part of the APCO Project 14 Aural Brevity Code developed for citizen radio operators between 1937 and 1939. These calls were used by civil servants, Hamm, and CB radio users until 2006, when the US government opted for plain language. Today is a play on numbers. "Voda" is Russian for water, and vodka is Russia's water of life. First distilled in homes during the 9th Century AD, the first commercial distillery began in 1174 AD, according to the Vyatka Chronicle. The Poles debate this, stating they first started making vodka in the eighth century AD. Proof exists of Polish vodka in the early 1000s AD when it was used as medicine. Once gunpowder was discovered, vodka contributed to its production as well. British diplomats brought vodka back to England during the Tudor era; by that time, it had become the national drink of Poland and Finland. Vodka was first exported as a commodity from Russia to Sweden in 1505. Around this time, flavoring vodka (to suss out impurities) became popular, and just about any flavor you can think of, from chicory to peppermint, was used. In the 18th century, charcoal was deployed for filtration; before this, it had been sand and silt.
