What it looks like on the ground The week typically combines ticketed restaurant events with open-to-the-public activity. The official event listings describe a three-day harbourside hub at Wapping Wharf — a pop-up with long communal tables, a demonstration kitchen, live music and a “Seafood Emporium” showcasing producers, fishmongers, pop-ups and oyster bars. Around that anchor, participating restaurants host one-off dinners and set menus that highlight “thoughtfully sourced” seafood — a structure intended to make the sustainability story tangible through what’s served and where it comes from.
