Chocolate Lover's Month likely came about due to the association of chocolate hearts with Valentine's Day. Chocolate beans first appeared around 1900 BC in Central America, usually as a bitter drink, often alcoholic or spiced with red peppers. It is quite a treat if you've never tried hot chocolate with red peppers using hot water instead of milk! It would take Christopher Columbus, on his fourth voyage, to bring this delicious bean to Europe. He noted his first encounter with chocolate in his ship's log on August 15, 1502. a few decades later, Spanish conquistador Hernán Cortés brought the bean back in bulk for European markets. He was only 17 when Columbus became aware of chocolate. However, it wasn't the sweet treat we see today in its Central American form. That required several inventions: John Baker's process of grinding cocoa beans between millstones to create a cocoa powder in 1764 is the first. Conrad Van Houten's method for extracting the cacao liquor from the fat in the cocoa bean in 1828 made chocolate affordable. And finally, the development of conching by Swiss chocolatier Rodolphe Lindt in 1879. The rest is sweet history. There are several different types of cocoa beans. Though native to the Americas, today, nearly two-thirds of cocoa production occurs in Africa. Ivory Coast is the largest producer. There is no official sponsor of this event. However, many trade organizations, restaurants, and retailers host promotions throughout February.

Condom Month, Ntl.: February

National Condom Month focuses attention on safe sexual habits and preventing sexual diseases by using a condom. The condom has existed in one form or another since 1564. Gabriel Falloppio developed the first consisting of a linen bag drenched in a solution of salt or herbs to protect men against syphilis. Eventually, it earned the nickname "English Raincoat." By the 18th century, sheep and goat intestines or silk and linen sheaths replaced the bags, but men had to tie these to their bodies to prevent them from coming off. The name condom is from the Latin "condus," which translates to "receptacle." Today, both male and female versions of the condom exist fabricated from latex (rubber), plastic, or sheep intestines.

The San Antonio Zoo is on to something with one of the most creative fundraisers we've ever seen. Animals have got to eat, and people need closure, and Cry Me a Cockroach solves both issues. Between February 1-13 each year, people with bad break-ups, brutal bosses, cruel colleagues, or obnoxious humans purchase a cockroach, leafy plant, or rodent and have it named for the difficult person. On February 14, the zoo feeds the named delicacies to the animals. Chomp, chomp, chomp—closure. Funds raised support the zoo's vision of securing a future for wildlife in Texas and worldwide. To participate and join in the fun, donate as little as five dollars and symbolically name a cockroach, rodent, or veggie after you're not-so-special someone.

Galgos are an ancient breed of sighthound used in competitions and hunting hares (wild rabbits). Unlike greyhounds, galgos are built for distance running rather than speed. They're relatively quiet dogs that do well with other dogs. In Spain, hunters see them as disposable tools. Their owners frequently discard or kill the dogs after the hunting season ends on February first rather than care for and feed them, especially if they are over three years old or injured. Galgos are wonderful family dogs and companions that get along well with other animals and dogs. Día del Galgo is an international awareness and fundraising campaign promoted by Galgos del Sol. Freedom Day celebrates the 13th Amendment to the US Constitution, ratified in 1865. The 13th Amendment made slavery illegal in the United States, except when used as punishment for a crime. It was signed on February 1, 1865, and was the first of the three Reconstruction Amendments adopted following the American Civil War. The 13th Amendment is as follows: Section 1: Neither slavery nor involuntary servitude, except as a punishment for crime whereof the party shall have been duly convicted, shall exist within the United States or any place subject to their jurisdiction. Section 2: Congress shall have the power to enforce this article by appropriate legislation.
